Ingredients

    For the Steak:

    • 1 to 1 ½ lbs flank or skirt steak
    • 2 tsp olive oil
    • 1 clove garlic, minced
    • Salt & pepper to taste

    For the glaze:

    • ¼  C Melinda’s Strawberry Ghost Pepper Jelly
    • 1 Tbsp apple cider vinegar
    • 1 tsp soy sauce or tamari
    • Juice of ½ lime

    For the taco assembly:

    • 8 small corn tortillas
    • ½ red onion, pickled
    • 1 avocado sliced or smashed
    • Queso fresco or cotija, crumbled
    • Fresh cilantro
    • Lime wedges to serve

    Directions

    1. Prep the Steak: Rub steak with olive oil, garlic, paprika, salt and pepper. Let sit at room temp for 20-30 minutes

    2. Make the Glaze: In a saucepan over low heat, combine jelly, vinegar and soy sauce. Stir until melted and smooth. Add lime juice if desired.
    3. Cook the steak: Grill or sear on high heat for 3-5 minutes per side. At the last minute, brush with glaze to caramelize.
    4. Rest and Slice: Let steak rest 5-10 minutes then slice thinly against the grain.
    5. Warm the tortillas: Heat tortillas in a dry pan or over an open flame
    6. Assemble tacos: Layer steak, avocado, onion, cheese and cilantro. Drizzle with remaining glaze or lime juice
